REFRIGERATOR DILLY BEANS

INGREDIENTS

  • Organic green beans – the fresher the better!
  • 1 bunch fresh organic dill
  • 8 crushed cloves of garlic
  • 2 TBSP organic pickling spices
  • 2 TBSP organic honey
  • 1/3 C organic apple cider vinegar
  • 2/3 C water
  • Dash of salt and pepper

DIRECTIONS

  1. Wash and snip the green beans. Place them vertically in a glass mason jar, along with the sprigs of dill and garlic.   
  2. Put the water, vinegar, pickling spice, honey, salt, and pepper in a pot on the stove. Bring to a boil.
  3. Turn off heat, and slowly pour the hot pickling liquid into the mason jar. Make sure tops of green beans are covered with liquid.
  4. Let jar cool, then store in refrigerator.
  5. Beans are ready to eat immediately, but the best flavor develops after 24-48 hours. Keeps well refrigerated for 2 weeks.
